Moody Blue cheese is hand-crafted in small batches using fresh local Wisconsin milk from Jersey and Holstein cows. This creates a rich, creamy blue that is then lightly smoked over fruit wood to create well balanced, slightly smokey undertones. This pasteurized blue cheese is made in the Roquefort style.
